I’ve hand-picked another recipe from my bootcamp’s weekly meal plan to share with you. Nothing says summer like fresh sweet strawberries, especially when they are part of a smooth, cold treat. Check this one out! Perfect for hot summer days, and packed with protein to fuel you up!
½ cup reduced-fat (2%) plain cottage cheese
1 scoop Strawberry Shakeology or other protein powder
2 Tbsp. unsweetened almond milk
¾ cup sliced strawberries
2 Tbsp. sliced almonds
To make filling, place cottage cheese, Shakeology, and almond milk in a blender; cover. Blend until smooth, scraping down sides as needed. If the mixture is too thick, add more almond milk (or water) 1 Tbsp. at a time.
Spoon half of the cottage cheese mixture into a serving bowl; top with half of the strawberries. Repeat with remaining cottage cheese mixture and strawberries. Sprinkle almonds over top.
This makes 1 serving and could be a great breakfast, afternoon treat or even dip or topping for fruit, pastries or cereal/granola.
